Pearse Lyons Distillery
The Pearse Lyons Distillery is located in Dublin’s historic Liberties. Here they create award winning, small batch Irish Whiskey in a restored 18 Century Church. The former Church of St James, now a distillery, is a home worthy of the spirit it embodies.
History of the Distillery
Named after the late Dr. Pearse Lyons, founder and whiskey innovator, the distillery opened its doors in 2017. Born from passion and family tradition, Pearse along with his wife Deirdre aspired to create a distillery like no other in Dublin.
Paying homage to their ancestors, five generations of coopers in Dublin, the distillery experience takes you on an immersive journey where you discover and explore the art of Irish Whiskey distillation and the unique culture of The Liberties, Dublin.
Pearse Lyons’s background was in brewing and he was aware of the proud history of whiskey distilling in the Liberties area of Dublin and so he decided to create a new distillery in an old disused church on James’s Street, just up the road from the Guinness brewery. Pearse Lyon’s grandfather had associations with the area and was in fact buried in the graveyard behind St. James’s church which made the location even more special
The old church building was tastefully and carefully restored and the interior lavishly designed and fitted out to create one of the city's most fascinating whiskey attractions, which would produce Irish whiskey for sale around the world, but which would also be a visitor attraction to showcase the process of distilling Irish whiskey.
